Southeast Asian Stir-fried Pumpkin with Egg

Stir-fried Pumpkin with Egg is a lovely comfort dish found in many parts of Southeast Asia. We love the creamy and savory flavors of the pumpkin which pairs beautifully with our aromatic white jasmine rice along with other Southeast Asian dishes. You can choose to cook Pad Fak Tong authentically by using Asian squash or pumpkin and keeping the skin on for a bit of crunch. What’s great about this recipe is that it requires few ingredients to create such intense flavors and is a very quick and easy recipe to follow. For a vegan version of our Stir-fried pumpkin with egg recipe, simply replace the egg with soft tofu, fish & oyster sauce with soy sauce and chicken stock with vegetable stock. 
  • 1 small pumpkin⠀
  • 4 cloves of garlic (minced)⠀
  • 4 eggs (beaten)⠀
  • 1 tbsp of fish sauce⠀
  • 1 tbsp of oyster sauce⠀
  • 2 cups of chicken broth⠀
  • ½ tsp of ground black pepper⠀
  • Fresh coriander⠀
  • 3 tbsp of vegetable oil⠀

  • ម្រេចខ្មៅ ½ ស្លាបព្រាកាហ្វេ
  • ជីវ៉ាន់ស៊ុយ
  • ប្រេងឆា ៣ ស្លាបព្រាបាយ
  1. On medium-high heat, add oil to a wok. Add garlic and stir-fry for 1 minute.
  2. Add pumpkin, fish sauce, oyster sauce and chicken broth.
  3. Cover wok with a lid and bring to boil for 7 minutes.
  4. Remove lid and check that the pumpkin is soft using a fork (boil longer if not yet tender or liquid not yet evaporated).
  5. Push pumpkin to one side of the wok and add eggs to the other side.
  6. Add the egg and fry until cooked, then mix with the pumpkin.
  7. Turn off heat and add pepper. Serve with fresh coriander and IBIS white jasmine organic rice.

  6. រួចដាក់ស៊ុតនិងចូលឆាអោយសព្វជាមួយល្ពៅ។
  7. បិទចង្ក្រាននិងបន្ថែមម្រេចនិងជីវ៉ាន់ស៊ុយ។ រស់ជាតិឆ្ងាញ់ជាមួយអង្ករសំរិត IBIS Rice។
